When it's mid-June, cloudy, and in the low 60's I can't help but think about things to bake. So since it feels like a fall day I decided to make some comfort food.
The recipe is pretty simple:
Ingredients:
1lb farfalle pasta (bowtie) cooked al dente
1lb shredded cheddar cheese
1/2 cup shredded parmesan cheese (not necessary)
2, 12.5 oz cans of chicken breast (we use kirkland
because it's like 1/5th the cost of anything else)
1/2 - 3/4 cup sour cream
1 - 1 1/2 cups milk (depending on your moisture preference)
1/4 cup bread crumbs
Black pepper
Instructions:
Preheat oven to 350 degrees
Drain cooked pasta and return to pot
Mix in sour cream and shredded cheeses (reserve about
1/4 cup cheese for topping)
Add chicken and black pepper, mix well
Add milk and mix well
Spray/butter dish to prevent a mess later
Pour pasta mixture into pan and top with remaining cheese
and then bread crumbs
Cover with tin foil or glass lid and bake for 35 minutes,
remove cover and bake for an additional 5 minutes.
